Recipe for Peaches with Sour Cream
½ pint (300ml) water
1 peach for each person
Caster sugar
Soured cream
Demerara sugar or toasted flaked almonds
Dissolve the sugar in the water and simmer for five minutes. Poach the peaches very lightly in this syrup, then skin them and slice them into a bowl, sprinkling each layer with very little caster sugar.
Cover thickly with soured cream and sprinkle thickly with Demerara sugar or optional toasted flaked almonds before serving.
