Fig and Almond Compote
1 Grannysmith apple, peeled, cored and diced
90g brown sugar
2 tbsps brandy
90g whole almonds
4 tbsps apple juice
Place the figs, diced apple and sugar in saucepan. Place on a medium heat and cook for 10 minutes. Add the brandy and cook for a further 5 minutes, until the alcohol evaporates. Remove from the heat. Add the almonds and apple juice and allow to cool.
