IRELAND’S most exclusive restaurants said yesterday they would not follow a recent move down market by a German restaurant owner who caused a stir in the world of cooking.

Diners at Thornton’s Restaurant on Dublin’s St Stephen’s Green and Restaurant Patrick Guilbaud on Merrion Street were assured the only Irish holders of two coveted Michelin stars had no plans to let their high standards slip.

German restaurateur Matthias Dahlinger recently upset food critics by deciding to hand back his one-star award from Michelin, the French tyre manufacturer whose restaurant guide has become the bible of the food world. Industry sources think of the Michelin stars as the equivalent of the Oscars, but Mr Dahlinger said the costs involved in meeting Michelin’s high standards were too high to justify the prestige.
