Mexican restaurant Zambrero opens fifth Cork location at the Marina Market

Zambrero has opened its newest restaurant at Marina Market in Cork, marking the brand’s fifth location in the food capital of Ireland.
The new opening joins Zambrero’s existing Cork locations at Dennehy’s Cross, Douglas Village Shopping Centre, Sallybrook in Glanmire, and Eastgate in Little Island.
Known for its fresh, Mexican-inspired dishes and modern superfood ingredients, Zambrero offers a healthier alternative to traditional fast food.
The menu features burritos, bowls, tacos, nachos, quesadillas, and a wide range of vegetarian, vegan, and gluten-free options, all made to order.
Speaking about the brand’s expansion into Cork’s largest indoor and outdoor market, general manager Darragh Fanning said: “We’re delighted to open our fifth Zambrero location in Cork, particularly in such a landmark destination as Marina Market, which has become a real hub for social gatherings, great atmosphere and quality food.

“I previously visited Marina Market while holidaying in Cork, and saw first-hand the incredible energy and mix of brands it brings together, so it’s fantastic to now see Zambrero become part of that offering and bring even more choice to customers.”
The new location joins more than 35 food outlets and retail stands at the Marina Market.

“We’re also delighted to be joining such a strong line-up of brilliant food operators and restaurants within the market, all of which help make Marina Market such a unique destination for locals and visitors alike,” Fanning added.
In addition to serving healthy Mexican cuisine, Zambrero is committed to its Plate4Plate initiative, which sees a meal donated to people in need through Zambrero’s charity partner, Rise Against Hunger, for every burrito or bowl purchased.

Meanwhile, popular Marina Market stall, The Saucy Cow, known and loved for its menu of vegan fast food favourites, has closed after almost three years on site.
Management cited rising costs of doing business as the reason for its closure after “really trying to make it work”.
“The last 12 months have been very difficult with the cost of doing business going up and we just didn't feel comfortable putting our prices up to match, as we were aware they were high anyway and it's a market setting so was only so much we could charge,” a post on Instagram revealing the news of the closure read.
Management apologised for their swift closure, with the transfer of some staff members to Dublin, and thanked their loyal customers and the Marina Market for housing The Saucy Cow.
