This week I’m focusing on ‘natural wines’, a term that is not easy to define but which generally involves wines made from wild ferment yeasts, with low or zero added sulphur and minimal intervention from the winemaker. Some natural winemakers like to say they let nature take its course and that after all ‘grapes want to become wine’. The retort of the wine writer to this is usually: ‘True, but wine desperately wants to become vinegar’.
