Michelin-starred eatery writes another successful chapter as profits increase
The decorated restaurant — co-owned by Cork native Ross Lewis — is enjoying the fruits of a boom in fine dining.
New accounts filed by Lindley Ltd, which operates Chapter One on Dublin’s Parnell Square, show that the firm’s accumulated profits rose by €12,776 from €277,463 to €290,239 in the 12 months to the end of February 28.
The firm’s cash during the year jumped by 42% from €683,121 to €975,717.
This represents a six-fold increase in its cash of €156,606 in the space of three years.
Chapter One attained its Michelin star in 2007 and the restaurant is one of only eight Irish restaurants sharing the distinction. Patrick Guilbaud is the only restaurant currently to have two Michelin stars.
The continued growth in Chapter One’s business follows its Chef Patron, Ross Lewis, receiving the distinction of being asked to cook for The Queen at the State banquet during her visit to Ireland in 2011.
The accounts show that the multi-award winning restaurant continued to receive a royal dividend last year with the profit increase.
Mr Lewis — who was unavailable for comment for the 2014 accounts — said previously that the Michelin star “is very important for the business. It is a mark of quality and an endorsement of what we are doing”.
The restaurant — which opened in 1992 in the basement of the Dublin Writers’ Museum on Parnell Square — has won numerous awards over the years
It won Best Restaurant in the Restaurant Association of Ireland for 2012 and the three preceding years and best restaurant in the Food & Wine Awards for 2010, 2009, 2006, and 2004.
The business last year published Chapter One — An Irish Food Story — written by Mr Lewis.
The restaurant’s four course dinner menu costs €70 with a tasting menu costing €85.
Dishes include stuffed pig’s tail, roast rump of Lough Erne lamb, and Mulloy’s smoked haddock and chargrilled asparagus.
