Ian Baitson died in Cork University Hospital last Tuesday after the assault on Friday, March 15. 

A man in his 30s is due in court on Monday charged in connection with the death of Cork chef Ian Baitson in Cobh.

Mr Baitson, a 32-year-old father of two children, was found seriously injured in a carpark in Cobh on March 15 and later died in hospital.

A man in his 30s was arrested in Cappoquin, Co Waterford on Friday. He was questioned by gardaí in Cork over the weekend and is due before Midleton District Court at 10.30am on Monday.

Gardaí launched an investigation last week after an autopsy was completed on Mr Baitson’s remains.

Mr Baitson was found badly injured after 8pm on March 15 in a car park near a busy shop on Newtown Rd in Cobh. Locals with first aid training rushed to his aid and cared for him until paramedics arrived but he died in Cork University Hospital last Tuesday.

Meanwhile, a Gofundme campaign has raised more than €14,000 for Mr Baitson’s grieving family, significantly exceeding its €1,000 goal.

Fundraising campaign organiser Shane Connolly said people who knew Mr Baitson have been left “utterly devastated” by his sudden death.

“Ian was a charming young man and proud father to two beautiful children,” Mr Connolly wrote. “His untimely departure has left a void that can never be filled.

“Those of us lucky enough to have known Ian fondly remember his infectious laughter, enthusiastic greetings, and smile that could illuminate even the darkest of rooms.

He was not only a great family man, but a great friend and colleague.

Mr Connolly said money raised through the Gofundme campaign will help cover the sudden and unexpected expenses of Mr Baitson’s funeral. 

It will also help support Mr Baitson’s “precious children”.

“The family also wish to donate a portion of the proceeds to the intensive care unit at Cork University Hospital (CUH) in honour of the exceptional care and support they provided to Ian during his time there,” Mr Connolly wrote.

“The ICU at CUH holds a special place in our hearts for the remarkable work they continue to do, and the extraordinary care they extend to patients and their families.“

"By making a donation in Ian’s honour, we express our deepest gratitude to the dedicated healthcare professionals who tirelessly serve our community through the most difficult of times.”

The funeral arrangements for Mr Baitson have been announced. He will repose at Cahill’s Funeral Home, Newtown Rd, Cobh from 5pm until 7pm on Tuesday, with prayers at 6pm.

After his removal at 12.30pm on Wednesday, Requiem Mass — which will be livestreamed here on mcn.live/camera/st-colmans — will be celebrated at St Colman’s Cathedral in Cobh at 1pm, followed by cremation at the Island Crematorium, Ringaskiddy.
