Colm O'Gorman's vegetarian breakfast with a twist - poha with poached eggs

Poha is considered quite a humble dish, probably because the ingredients are quite simple, and because it is so quick and easy to prepare. It has wonderful flavour though and is deeply satisfying to eat.
Poha is an Indian breakfast dish, popular in Western and Central India, made with flattened rice that is cooked with spices, onion, potatoes and a few other ingredients.
The core ingredient is rice that has been parboiled, flattened, and dried. You will find it in any good Asian supermarket, labelled as pawa or poha. It is a wonderful ingredient that requires little cooking with a lovely light, fluffy texture.
