Aishling Moore: These bacon and cabbage baked oysters are tasty for first-timers

They are so much more versatile a food than we ever give them credit for.

Aishling Moore is head chef and co-owner of Goldie, the award-winning seafood restaurant in Cork city. A pioneer of gill-to-fin cooking in Ireland, and author of cookbook The Whole Catch, she's won multiple awards for her cooking and writing.

During the summer I was very generously gifted a few shopping bags worth of cookbooks by another serial collector who was clearing space in their library. Those bags were full of some real gems, old and new, all of which I will cherish.

I’m practicing restraint and tackling one book at a time.
