Khadi Paneer

Serves 4 as a side dish, 2 as a main course

Khadi Paneer

3 tbsp peanut oil 4 tbsp coarsely grated unpeeled ginger 2 sliced red onions (medium) 1 sliced green pepper (small) 3-4 ripe tomatoes 110g (4oz) peas, fresh or frozen Salt to taste ½ tsp turmeric 200g (7ozs) paneer (diced into ¾inch dice) 2 tsp Chana masala — available from Asian food shops

Put 3 tablespoons of peanut oil in a kadhi or wok over a medium heat.

Add the grated ginger, stir, then add the sliced red onions, green pepper, tomatoes and peas. Add salt to taste and a good ½ teaspoon of turmeric. Finally add the diced paneer.

Stir and allow to cook on a low heat for 3-4 minutes. Add 2 teaspoons of chana masala. Stir and cook for 4-5 minutes.

Taste and serve with chapatti, naan or parathas.
