Mushrooms do two great things in cooking, they add a wonderful earthy flavour but they also absorb other stronger flavours and allow them to blend and create new distinctive tastes.

I have paired mushrooms with two very different, but equally strong flavours, anchovy and miso.

The Asian saltiness of miso and soy work well together in this dish and the rice dilutes the strong sauce.
