Serves 4-5. The jewel-like seeds of the pomegranate look like glistening rubies and somehow appear very festive. A grapefruit sorbet is particularly versatile.

It can be served at the beginning, in the middle, or at the end of a meal and would make a delicious light refreshing starter on Christmas Day.

1 litre (1¾ pint) ruby grapefruit juice (10 grapefruit approx.)
