Catering trainee brings home the bacon

A catering student from Dingle has won the overall award in this year’s Irish pork cookery competition, coordinated by Bord Bia, jointly sponsored by Dawn Pork and Bacon, Glanbia Meats and the IFA.

Louis Brosnan, a student at Tralee Institute of Technology, was rewarded with a €1,000 cash prize, a trophy and a bursary to the value of €2,000 towards further education for his efforts.

Food Minister Brendan Smith, who made the presentations, said the competition was aimed at increasing the presence of Irish pork on menus throughout Ireland and educating students on the versatility and variety of Irish pork cuts.
