Amy’s Cheesy Leek Bake

AMY, one of Sarah’s friends treated them to this one night at her house for dinner.

Serves 4-6

3 medium-large leeks

Butter

Salt and pepper

2 eggs

200ml (7 fl.oz) cream

85g (3oz) cheese, grated

Set the oven to gas mark 5/190C/375F. Clean and slice the leeks into 2cm (¾ inch) rounds. Put a knob of butter into a frying pan and place on a moderate heat. When the butter has melted, add the leeks and cook until they begin to soften.

Butter an ovenproof dish and put the leeks into it. Season with salt and pepper. Whisk the eggs and cream together and pour over the leeks. Sprinkle the top with grated cheese and bake in the oven until browned and bubbling, about 30-40 minutes.
