Recipe for Curly Kale with Olive Oil and Garlic

Serves 4-6.

3 tbsp olive oil

1 large head of curly kale, stem discarded, leaves rinsed and roughly chopped

3 garlic cloves, thinly sliced diagonally

1 fresh red chilli, seeded and chopped (optional)

Juice of ½ lemon

Sea salt and freshly ground black pepper

Heat the olive oil in a large saucepan or wok until really hot, and add the kale (it makes a great sizzling noise).

Give it a good stir and add the garlic and chilli, if you like a bit of a kick.

Stir fry for 7-8 minutes, taking care not to burn the garlic, then season with salt and pepper, and sprinkle over the lemon juice. Then eat up your greens.
