Drogheda-based Aoife Collins used to bring hand-decorated cakes to her work-mates, and now she is making them for a living from her Cake Couture, shop in Drogheda.

She found a niche market as more people have begun to bake at home as they attempt to cut costs and become more self-sufficient.
