MUCH has changed on the Irish food scene since I started the Ballymaloe Cookery School in September 1983.

From time to time we invite a chef whose food we admire and enjoy, to come to the school to teach a guest chef course.

YOU must all go to Clare — more specifically to the Burren area of north Clare.

IRELAND’S future is unquestionably in food production. At long last we are recognising the fact that Ireland is in an enviable position in terms of natural resources – we are an island nation on the edge of Europe with 400 million affluent consumers on our doorstep.
