“My hospitality career started in 2004 when I was living in Greece. I started my career as night porter in a hotel. I stayed there for four years and eventually moved to Ireland. From there on I started working in a five-star country hotel in Co Waterford. I became involved in waitering and bartending.
"I fell in love with the general thought process around Irish hospitality and the pride Irish people hold of everything Irish. The cocktail craze began roughly around 2010 in Ireland.
"I worked hard to earn as much money as I could, and every time I had enough money I spent it on travelling around the world attending bartender masterclasses to upskill and learn as many different techniques and thought processes as I could.
"My travels have taken me to Japan, Estonia and Finland to name a few. Initially I fell into it, but as I became more submerged into the wonderful world of hospitality I came to love it. I love the unpredictability of what I do. From judging cocktail competitions to travelling all over the world to host private parties for all sorts of celebrities.
"To be honest, working in a property like Adare Manor there is no such thing as a typical work-day. There’s been plenty of late nights and early mornings, but it’s the little moments that count — the moment when a guest’s eyes light up as one of our signature cocktails is placed in front of them.
"The unpredictability of a day in Adare Manor is what keeps us motivated. It’s often when one finishes the day’s work and you sit back and relax that the realisation dawns on you that so many guests were drinking cocktails that we spent many hours developing.
"That makes me proud to work here at Adare Manor. My favourite part of my job is having the opportunity to meet many incredibly talented international bartenders and having the opportunity to travel the world.
"When I first started working in Ireland I came to the realisation that Irish people are so passionate about hospitality. When I came to Adare Manor during the pre-opening, that’s when I was really exposed to how passionate people are about hospitality here. I was really blown away as it was beyond anything I’d expected.
"It is also pretty clear that the passion has paid off. Without the support of my colleagues it would have been difficult to achieve some of my personal awards. The support from management was overwhelming.”
