As most parents know, it can be a struggle to get their little ones to eat their greens.

Laleh Mohmedi - from Melbourne, Australia - was no different from any other parent, but she’s come up with a brilliant idea to encourage her three-year-old son Jacob to eat his fruit and vegetables.

Laleh uses healthy food to create famous children’s characters that her son will recognise on his plate and then posts her results to her Instagram page before he eats them.

What makes her creations even more amazing is that the mother has no background in design or art.

Speaking to ABC News Laleh explained that a simple trick with Jacob’s pancakes in May 2015 sparked the whole endeavour.

"Last May, I decided to turn Jacob’s spelt pancakes into a lion. He absolutely loved it and it progressed from there," said Laleh.

"I have always been a strong advocate in healthy organic eating for children. Jacob tells me which character he would like for me to make, be it from a book, a movie or something that has caught his eye that day."

Laleh’s Instagram page has grown hugely since she started posting her meal pictures and she now has over 46,000 followers on the picture sharing site.

"Jacob has always been exposed to a variety of different foods. The only creations that Jacob does not eat are the ones that are made just for art/tribute."

We think Jacob is a very lucky boy to have such a creative mother, although you would become very hungry looking at those photos!
