Pigs’ Tails with Swede Turnips

Paddy McDonnell’s stall in the Cork market is just one of several that sells pigs’ tails, skirts and kidneys and bodices. He says he still sells about 200 a week, but is concerned because they are becoming more difficult to find. Most pigs reared in an intensive way have their tails docked.
