Tomsatina Chutney with Basil and Thyme

Make when there are lots of tomatoes and basil around. This chutney is good to eat with strong cheddar-style cheese. In summer, just as the thyme is flowering, you should prune it hard, so it has another growth spurt before autumn. Then use the cuttings for recipes like these. Basil should be in full flavour at the same time.
