Michelle Darmody: Using salt in baking
Salt sustains us, it is a naturally occurring element in the earth and in our bodies.
Natural salt is extracted from the sea, from rocks, it forms as snow white crystals, pink solid chunks or dark, slate grey powder. It is one of our oldest traded commodities, and has transformed how humans can preserve and transport food, from places of plenty or in times of scarcity. Salted meats and vegetables fermented in salt last far longer than their fresh counterparts, so that months after a harvest nutritious food can be eaten and shared.
