Biomass proteins derived from microorganisms are also new. Proteins are also derived from fungi.

Proteins from fermentation or from fungus could play an important role in the future as more sustainable foods. 

Unfortunately, in a survey in the US, only 1% said "fungi" food in the supermarket would catch their attention or motivate them to shop, and the figure was only 3% for "fermented" food.
