The black tie gala begins in the Cork five-star hotel with a Champagne and canapé reception, followed by a seven-course gourmet meal at Orchids restaurant. Festivities will continue with entertainment from Hayfield Manor’s resident jazz & swing band, the Roaring Forties. At around half past ten, a lavish cheese display will appear with accompanying port, and the New Year will be rung in with Champagne in hand. The following day, enjoy a gorgeous breakfast before heading to the spa for the day. The two-night package costs from €544 per person sharing.

Dublin’s Shelbourne

Rub shoulders with the glitterati at The Shelbourne this New Year’s Eve. Start with a meal at the Saddle Room restaurant before moving on to the glamour of Bar 27, and mingle with Dublin’s most glamorous patrons as they party the night away. New Year’s Eve dinner in The Saddle Room is €145 per person with table reservations from 5pm to 10pm, or stay the night with one nights’ accommodation in one of The Shelbourne’s gorgeous Deluxe rooms, and traditional Irish breakfast on New Year’s Day. GREAT GATSBY GLAMOUR

Hark back to the 1920s with a Great Gatsby themed New Year celebration at Cork International hotel. The party kicks off at 7pm with a Champagne reception. At 8pm, a four-course banquet will be served as guests are entertained by music. Following dinner, the Bentley Boys will lead the entertainment through the evening, ahead of a celebratory balloon drop at midnight. The Pullman restaurant at Glenlo Abbey in Galway offers a unique venue to spend New Year’s Eve. The restaurant comprises two dining carriages which date back to 1927 and were part of the original Orient Express. The conductor will greet guests for the evening at the station platform, before they board the train for the most memorable and unique dining experience. The six-course New Year’s Eve Menu is followed by live entertainment and a Champagne toast at midnight and costs €85 per person.
