Of all the wild edibles, elderflowers are one of the most bountiful and accessible — they’re foraging heaven.

The heady sweet scent permeates country lanes, roadsides, graveyards, parks and gardens and the sprays (umbels), containing hundreds of tiny five-petalled flowers, must have more uses than any other single species of blossom.
