Getting to grips with an abundance of courgettes

SUMMERTIME and the living is easy. This could differ if you have one too many courgette plants cropping copiously in your garden and you are running out of friends to give them to.

Also known as ‘zucchini’, these prolific producers are members of the Cucurbita family, making them close relatives of squashes and pumpkins.

Despite their exotic names, courgettes grow abundantly in Ireland and plants are producing outrageously even during a horrendous summer.
