As part of his Traditions of the Land series, Max Jones of Up Here The Last returns with a natural cheese and butter making course (August 17) in The Booley, in Leap, in West Cork. The day-long event begins with theory but is soon elbow deep in bainne as participants skim cream, churn, and shape butter and learn how to coagulate milk into curds.
