Now 10 years beyond official retirement age, Darina Allen has indeed stepped back from her Ballymaloe Cookery School obligations – only to hurl herself headlong into her newest passion project, the Ballymaloe Organic Farm School, which offers courses for those wishing to immerse themselves completely in living and working on the land in a regenerative fashion.
