Fresh Strawberry Sponge

This cake uses a Genoise sponge as a base. This is a light and airy whisked sponge, with the addition of melted butter, which adds extra flavour and moisture, and makes it keep slightly longer. Its delicious served as it is here, in a single layer with whipped cream and fresh strawberries, or you can sandwich the cream and fruit between the two layers.
