I’M SO delighted - I have just made my plum puddings. Here, the tradition is to eat one plum pudding after the first boiling, slathered in Mrs Hanrahan’s Sauce.

I’m now planning to make my next Christmas cakes. The first one was to show the students how to make and ice a rich fruit cake.

This time, though, I’ve decided to make two or three small cakes, and ice them each differently. In reality, many households don’t really need a 9” or 10” cake - a little slice or two is enough to continue the tradition, and a finger or two to nibble after Christmas with a cup or coffee or tea is as much as many people enjoy.
