THE Science of Food — Safety and Nutrition is the subject of a major international conference at Croke Park in Dublin tomorrow and Friday.

Organised by Teagasc Ashtown Food Research Centre, it is the final in a series of six conferences held across Europe over the last three years by the European Union Risk Analysis Information Network.

Experts will discuss why an estimated 10%-30% of the populations in industrialised countries suffer food-borne illnesses every year, usually due to food contamination, and why the health of millions is at risk due to being overweight or obese.
