James Daly’s side showed superb fitness having beaten champions UCC in extra-time just 24 hours earlier.
Daly said: “We’ve trained hard all year and have probably had 45-50 sessions. Aidan O’Rourke has done super work with the girls, there were a lot of tough runs in the rain but it’s all paid off. We knew that we couldn’t ease off at half-time when we were three points up, and had to push on.
That was our cry at half-time, to put the game out of sight,” Daly added.
Outside favourites prior to the weekend, QUB’s Ruth Kearney, who was named player of the match for her 2-3 tally, had no doubt they were capable of upsetting the odds.
“We came down to Waterford IT with one goal, and that was to win. We weren’t just coming down here to make up numbers,” said the Westmeath star. “I’m just ecstatic, it’s brilliant.
Elsewhere, NUIM claimed the Giles Cup, defeating Carlow IT 1-13 to 2-4, while in the Lynch Cup final Trinity College beat DIT 1-13 to 2-8.
