Simply wicked - Roz Crowley serves up three spellbinding dishes made with pumpkin
CHOP it, grate it, purée it, roast it, steam it, stir-fry it, sweeten it, spice it up. But, whatever you do, don’t throw it out.
Once you carve a pumpkin for decoration, scoop out the flesh and cut down the inside to leave about 3cm attached to the outer skin. You will need a sharp knife and spoon to cut and then to scrape the flesh off the skin. If inexperienced with a knife, stick to straight lines, first using a marker on the skin to create the design. Expect to take up to 30 minutes to create a sculptural masterpiece.
