A Co Waterford company employing three workers in the manufacture of luxury biscuits has been commissioned to supply its product to retail giant Marks and Spencer.

The rolling contract ensures Lismore Food Company’s All Butter Irish Shortbread is now available in more than 850 M&S outlets in Britain. The deal comes just a year after the company was formed. The company comprises Ken Madden, his partner Beth-Ann Smith, and his brother Owen.

Ken, a former Lismore town councillor and estate agent, says the trio mostly produce their biscuits in the evenings and weekends but “may have to rejuggle the schedules a bit now”.
