Celine Byrne: When I travel, I love experiencing different cuisines.

Fresh from her run as Madam Butterfly, celebrated Irish soprano Celine Byrne is preparing for her festive Christmas celebration concert at the Bord Gáis Energy Theatre on December 14. Music has brought her all around the globe — singing for presidents, popes, and royalty, and performing in some of the world’s most iconic opera houses. But for the Kildare native, it’s the memories, meals, and moments of stillness that mean the most.

Favourite childhood holiday memory

I grew up in the country, and we used to head off with the caravan hooked onto the back of the car to Tramore. But most of my childhood summers were spent on the bog, footing turf. We’d pile it up, bring it home in a trailer, and sit on top of it on the way back. Sometimes we’d stop off for a swim in the canal — all the things that would probably get you arrested for health and safety now! We didn’t travel much. My dad never had a passport and was afraid to fly. But those summers on the bog were better than any holiday. We had such fun.

Most memorable trip

I’ve travelled the world with my work. I’ve been to China, Thailand, Saudi Arabia, Switzerland, and so many more.

China really stands out. I probably wouldn’t have been able to go there otherwise, but I performed concerts in places like Shanghai and Shenzhen. It was amazing to experience the culture.

Thailand was another standout. I was invited to sing for the king and queen in Bangkok, which was such an honour. And Saudi Arabia was so different, it was a real cultural shock, but fascinating.

Most surprising destination

I was really surprised by Zadar in Croatia — in the best way. Most people think of Dubrovnik or Split, but Zadar has so much history. It wasn’t heavily bombed in the First World War so a lot of the Roman ruins are still there, including the old streets and Roman forums.

The promenade was rebuilt after the Second World War using solar panels that light up at night. There’s also a sea organ built into the wall; the waves make music through the pipes. It was just stunning. You get a mix of history, culture, and being right by the sea.

Favourite city

I live in the country, so I don’t like huge cities; New York was too big for me. I prefer smaller cities, and for me, Dublin is my favourite.

It’s not massive, but it’s full of culture and history. There’s the Book of Kells, St Stephen’s Green, and all the beautiful galleries and museums. I perform there often and love staying overnight when I do.

I look forward every year to doing my Christmas gala at the Bord Gáis Energy Theatre, staying at the Marker Hotel, and going Christmas shopping the next day.

Favourite hotel

The Falkensteiner Hotel in Zadar, Croatia. That was my first time in a seven-star hotel, and it was incredible. We had massages on the beach, the spa was amazing, and the hotel pool used actual seawater.

I prefer swimming in the sea to pools, less chemicals! But this place had it all, and my whole family was with me, my three kids, and my husband, so it made it extra special.

I also have to mention the Clayton Hotel in Cardiff Lane; they always look after me so well when I’m performing in Dublin.

Most memorable food experience

It’s not one experience, because I love food — I’m a real foodie! When I’m home, I love going out with friends to try different restaurants. But when I travel, I love experiencing different cuisines. Turkish food is probably my favourite. There’s so little processed food there, everything is fresh. The carrots are bendy, the tomatoes taste like actual tomatoes. Their Turkish breakfast is amazing; small plates of everything. My favourite is a dish called Menemen: Eggs, herbs, and tomatoes. So simple and delicious.

Favourite thing to do while travelling

Definitely anything to do with history. I’m very stimulated by history, so I love going to places where there’s something to learn, from museums, ruins, and cultural landmarks. But I also have a bit of a quirky travel ritual: I always want a bath in my hotel room! I’ve only had one bath in my own home in 18 years, I just can’t relax at home. But in a hotel? Give me a bath, a glass of wine, and my comfy pyjamas, and I’m in heaven.

Bucket list trip

I’ve never been on a cruise and I’d love to go. Not a booze cruise! But something like a Caribbean cruise. I’ve been to many places in Europe for work, and I’d like to see somewhere different. The Caribbean would be amazing — getting to stop off at all the different islands, enjoy the weather, and explore somewhere new. I think I’m at the age now where I’m ready to give it a go!
