Fresh ginger is a wonderfully versatile ingredient to have in the kitchen, I often grate it into a cup of hot water for a refreshing tea or add it to a simple bowl of miso soup to liven it up.
I generally roughly peel a piece of ginger and trim off any hard pieces from the edges. It can be either sliced, diced or you can grate it directly into a dish.
