  • 2 tbsp golden rapeseed oil (plus 1 extra tbsp for finishing)

  • 1 large white onion

  • 1 red bell pepper

  • 1 red chilli

  • 2 cloves of garlic

  • 1 tsp ground cumin

  • ½ tsp smoked paprika

  • ¼ tsp ground coriander

  • 1x 400g can of plum tomatoes

  • 1 tsp caster sugar

  • Sea salt

  • Freshly cracked black pepper

  • 1x 120g tin of sardines

  • 4 large eggs

  • 1 small bunch of parsley
