  • 100g hazelnuts, skinned and toasted 

  • 6 egg whites

  • salt

  • 350g caster sugar

  • 3 tsp sifted cocoa powder

  • For the filling:

  • 300ml cream

  • 250g raspberries

  • For the chocolate sauce:

  • 50g plain chocolate, broken into pieces

  • 2 tbsp cream

  • white chocolate shavings, to decorate

  • icing sugar, to dust
