Ingredients
90g plain flour
¼ tsp baking powder
¼ tsp bread soda
85g soft butter
70g miso paste (white paste is recommended)
100g light muscovado sugar
40g caster sugar
1 egg
1 tsp vanilla
110g porridge oats
50g black sesame seeds
50g white sesame seeds
Method
Preheat your oven to 180ºC/gas mark 4.
2. Line two large flat baking sheets with parchment.
3. Sieve the flour, baking powder and bread soda and set them aside.
4. Beat the butter, miso and sugars together until soft and fluffy.
5. Lightly beat the vanilla and egg together.
6. Add the egg mixture to the butter mixture and combine.
7. Add in the flour, oats and two-thirds of the sesame seeds and combine.
8. Spoon the dough into balls and press the top of each ball in the remainder of the sesame seeds before placing onto each of the baking trays.
9. You can place eight balls on each tray and flatten them slightly.
10. Place the trays into the preheated oven and bake for about 15 minutes until golden.
11. Once the cookies are cool enough to handle, transfer them onto a wire rack to cool completely.
