Sweet potato wedges
For an easy, hearty side dish filled with natural flavour, try these sweet potatoes wedges with a dollop of sour cream

Ingredients
2 sweet potatoes (approximately 450g/1lb in weight, orange fleshed, if possible)
2 tbsp olive oil
sea salt
freshly ground black pepper
Method
Preheat the oven to 200°C.
Wash the sweet potatoes and cut them into quarters, put into a bowl and drizzle with extra virgin olive oil.
Sprinkle with sea salt and turn into a roasting tin.
Bake for 10-15 minutes or until just tender turning once until completely tender and lightly golden.
