Roast onions with rosemary

Ingredients

  • 4 medium onions

  • 4 tbsp extra virgin olive oil

  • 2 tbsp Balsamic vinegar

  • 2 tbsp rosemary, chopped

  • salt

  • black pepper

Method

  1. Cut the onions into thick slices – about 2cm thick. Thread 2 or 3 rounds onto flat skewers.

  2. Mix the oil, vinegar and chopped rosemary in a bowl. Dip or brush both sides of the onion rings, season with salt and freshly ground black pepper.

  3. Cook on a medium grill until cooked through and nicely charred. Turn occasionally and drizzle a little more dressing over the top to serve.Â
