Spiced cranberry sauce
 Ingredients
450g granulated sugar
125ml white wine vinegar
½ stick cinnamon
1 star anise
6 garlic cloves
5cm piece of fresh ginger, peeled
1 chilli, split and seeded
450g cranberries
lemon juice

Method
Put the sugar, vinegar, cinnamon, star anise, cloves, ginger and chilli in a stainless-steel saucepan with 225ml water. Bring to the boil.
Add the cranberries, bring back to the boil and simmer very gently until the cranberries burst. Lift out the hard spices with a slotted spoon.
Add a little lemon juice to taste. Serve warm or cold.
