Ingredients

  • 1 fresh egg

  • 10g butter

  • 1 generous desertspoon white sesame seeds

  • freshly ground black pepper and sea salt

  • a sprinkle of Aleppo pepper or hot chili sauce (optional)

  • coriander or flat parsley

Method

  1. Heat the butter in a frying pan over a medium heat, sprinkle the sesame seeds into the centre. Crack an egg on top, cook for a couple of minutes until the base is setting and the sesame seeds are toasty.

  2. Season with freshly ground black pepper.

  3. Flip the egg over, cook for a further minute or two.

  4. Slide onto a warm plate, sprinkle with a few flakes of sea salt, Aleppo pepper to taste and some coriander or flat parsley.

  5. Enjoy with crusty bread.
