  • 25g butter

  • 2 medium leeks, thinly sliced

  • 8 eggs

  • 2-3 tbs freshly chopped dill

  • 25g gruyere cheese, grated

  • 1 tsp salt

  • pepper

  • 175-225g smoked salmon, cut into dice

  • 23cm non-stick pan
