100g hazelnuts, skinned and toasted
6 egg whites
salt
350g caster sugar
3 tsp sifted cocoa powder
For the filling:
300ml cream
250g raspberries
For the chocolate sauce:
50g plain chocolate, broken into pieces
2 tbsp cream
white chocolate shavings, to decorate
icing sugar, to dust
