  • 45g butter

  • 30g flour

  • 300ml milk

  • 4 eggs

  • 55g Gruyère cheese, finely grated

  • 55g Parmesan, freshly grated

  • a pinch of cayenne pepper

  • nutmeg

  • salt 

  • pepper

  • 8 individual soufflé dishes, 7cm (2¾ inch) diameter x (4cm)1½ inch high or one large dish 15cm (6 inch) diameter x 6.5cm (2½inch) high
