  • 1 tbsp ground rice (fine)

  • 2 egg whites 

  • a few drops of vanilla essence

  • almond flakes for decoration

  • 425ml double cream

  • juice and grated zest of 1½ unwaxed lemons

  • 1 tbsp rum
