Ingredients

  • 15-25g (1/2-1oz) butter

  • 75g (3oz) onion, finely chopped

  • 225g (8oz) mushrooms, sliced (flats have best flavour)

  • 110ml (4fl oz) cream

  • 1 teaspoon freshly-chopped parsley

  • ½ tablespoon freshly-chopped chives (optional)

  • a squeeze of lemon juice

  • Salt and pepper

  • Roux: 

  • 110g (4oz) butter

  • 110g (4oz) flour
