Myrtle’s mint sauce for Easter lamb
This traditional mint sauce, made with tender young shoots of fresh mint, takes only minutes to make - a delectable compliment to tender lamb

Ingredients
25g fresh mint, finely-chopped
1 tbsp sugar
110ml boiling water
25ml white wine vinegar or lemon juice
Method
Put the freshly chopped mint and sugar into a sauce boat.
Add the boiling water and vinegar or lemon juice.
Allow to infuse for 5-10 minutes before serving.
