Method

  1. Line a 2lb loaf tin with parchment and preheat your oven to 170°C.

  2. Place the treacle, syrup and butter in a heavy based saucepan and gently melt them together. Set aside to cool slightly.

  3. Sieve the baking powder, bread soda, flour and spices together and stir in the caster sugar.

  4. Stir the cooled butter mixture into the whisked egg and add this to the dry ingredients. Combine everything well and then scoop it into the prepared tin.

  5. Bake for about 50 minutes or until baked through.

  • 80g treacle

  • 40g golden syrup

  • 60g butter, softened 

  • 140g plain flour

  • ½ tsp baking powder, sieved

  • 1 tsp bread soda, sieved

  • 2 tsp ground cinnamon

  • 2 tsp ground ginger

  • 90g golden caster sugar

  • 1 egg, whisked

  • 125ml buttermilk
